Hold Fruits, Vegetables Under Water While Slicing
Slicing causes damage to the cells hit by the knife. They release chemical and other signals to nearby cells that something's wrong. The neighboring cells respond by changing in a way that hurts the flavor and texture. Running water over the food while cutting it inhibits those signals and keeps the produce fresh. We've put men on the moon; why did it take us until 2005 to figure something like this out?
